CMC powder is an alternative to gum tragacanth which has a number of practical uses in cake decorating and sugarcraft:

Add a small amount to sugarpaste to achieve better elasticity and handling.

To make flowerpaste / modelling paste from sugar paste; the CMC powder allow the paste to dry quicker and firmer, ideal for model making. Add approximately 1 teaspoon for each 250g of white or coloured icing, then leave for around half an hour. Re-knead before use.

To make edible glue: Mix a quarter teaspoon of CMC powder with approximately 50ml of water and leave in the fridge overnight. 

Ingredients: Carboxymethylcellulose, Rice starch.

Store in a cool dry place.
