Place the chocolate into a bowl (microwave safe) and put it into the microwave (at medium temperature,
stirring not to burn) until it reaches 40ºC. Pour 2/3 of the melted chocolate onto a marble or stainless-steel table
with a spatula; stir it quickly, wrap-around motions until it reaches 27ºC. Put it back into the bowl with the
remaining chocolate, ensuring it reaches 29/30ºC. Chocolate is ready to be made into chocolate bonbons
